The Classic II has an 'Air Lift Hinge' and a 'Kontrol Tower Vent' which the Classic I doesn't have. The Air Lift hinge makes opening and closing the grill easier as it takes some of the weight (You can lift it with a finger) and offers an almost 'Soft close' function. The upgraded vent allows for precise airflow adjustments which is good for smoking or longer cooking times.
The Classic III has all this plus a Hyperbolic Smoke Chamber and 3 tiers of cooking space rather than 2. The smoke chamber distributes smoke evenly and recirculates it for optimum smoking that isn't available in the other two grills.

The Air-lift hinge just makes opening and closing easier and is adjustable. It operates a little bit like a soft-close drawer
